Taiwan networks Chunghwa and everyone else
Chunghwa Telecom is the former state operator and still has the deepest coverage in the mountains, along the east coast and through the Taroko and Alishan roads. Far EasTone is a strong second, especially in the west-coast cities. Taiwan Mobile is fine in Taipei, Taichung and Kaohsiung and thinner in the interior.
For a Taipei, Jiufen and Tainan trip any of them is fine. For the east coast, Hualien and the mountain highways, Chunghwa is the one you want on the plan.

Taoyuan airport has counters from all three operators selling tourist SIMs, typically NT$300 to NT$1,000 (roughly $9 to $31) for 5 to 30 days, often with unlimited domestic data. That is genuinely good value and it includes a Taiwanese number.
Klook and similar marketplaces resell the same operator SIMs and eSIMs, sometimes cheaper than the counter, and it is why "Klook eSIM Taiwan" is searched as often as the providers themselves. Does a Taiwan eSIM come with a phone number?
No, every plan here is data-only. Local operator SIMs bought at Taoyuan do include a Taiwanese number, which matters if you want to book a high-speed rail ticket by phone or use a domestic delivery app. For everything else, LINE covers it, and LINE is what Taiwan runs on.
How much data do I need for a week in Taiwan?
About 3 to 5GB for maps, messaging and photos. Taiwan has excellent free wifi in metro stations, convenience stores and cafes, so your eSIM does less work than in most countries. Budget 10GB only if you stream on the trains or tether a laptop.
Will my eSIM work in Taroko Gorge and on the east coast?
On Chunghwa Telecom, mostly yes, with dead spots inside the gorge itself and on the tunnelled sections of the coastal highway. On Taiwan Mobile alone, expect longer gaps. Download offline maps for the Hualien to Taitung stretch regardless of provider.
Is Taiwan eSIM data as fast as it looks?
Taiwan runs some of the fastest mobile networks in Asia and 5G is widespread in the cities on Chunghwa and Far EasTone. What your travel eSIM gets is the same radio network at roaming priority, which in practice means fast but not always first in line during peak evening congestion.
